Burrito for Breakfast

Ingredients:

2 tbsp vegetable oil, 1/4 cup finely chopped red onions, 4 slices of bacon or chicken (any preferable protein), 1/2 cup pre-cooked black beans, 2 packed cups of baby spinach or roughly chopped spinach (normal), 1/2 cup tomatoes, thinly sliced, 4 eggs, 1/4 cup ricotta cheese (any preferable cheese), chopped spring onions, 1/2 cup chopped cabbage , whole-wheat tortillas/flatbreads, spoonful of guacamole

 

How to

In a pan heat 1 tbsp of oil. Add the onions and cook for 5 minutes until softened. Add the bacon over high heat stirring until browned, for 3 minutes. Add in beans, spinach, tomatoes and cabbage cooking until spinach is wilted. Transfer to a bowl and season with salt and pepper. Cleaning your pan add in another tbsp of oil to make scrambled eggs over moderate heat. Gently stir in bacon mixture with chopped spring onions, ricotta cheese. Make your own cheese or buy from local store.

Warm your flatbread slathering with guacamole that is 1 cup of ripped avocados mixed thoroughly with minced garlic and salt and chilli flakes. Then spoon generous amount of filling in the middle. Fold the sides of the flatbread, then fold the bottom of the flatbread over the filling and continue to roll until the filling is enclosed. Cut the burrito in half and serve.
