South Indian hits differently. A perfect healthy breakfast, Rava Dosa is served the best at Malabar Groove at Chaya center, Kathmandu. We have the recipe for you to try at home.

 

Ingredients (for 5 portions)

  • Semolina (Suji/Rava) 100 grams
  • Rice flour 100 grams
  • All-purpose flour (Maida) 50 grams
  • Cumin seeds (Jeera) 1 teaspoon
  • Black pepper 1 teaspoon
  • Green Chilly 1 piece
  • Ginger 1 gram
  • Coriander 2 grams
  • 1 teaspoon salt (to taste)

 

Rava Dosa Recipe

  1. Add 100 gms of Semolina (Suji/Rava) to a large mixing bowl
  2. To the same bowl, add
  • 100 gms of rice flour,
  • 50 gms of all-purpose flour (maida),
  • 1 teaspoon salt,
  • 1 teaspoon cumin seeds (jeera),
  • 1 teaspoon black pepper
  1. Next add
  • 1 green chilly chopped
  • 2 gms finely chopped coriander leaves
  • 1 gm grated ginger
  1. Pour 250 ml water to make a runny batter
  2. Mix everything well and make the lump-free batter. It has to be very runny and watery. Cover and rest for 20 mins.
  3. Heat a cast iron pan on medium-high heat. When the pan turns hot, drizzle a few drops of oil or ghee and grease it well with sliced onion or a cloth. Wipe off the excess oil.
  4. After resting the batter, recheck the consistency of the batter by stirring it. If needed add more water and ensure the batter is runny. Stir the batter very well every time before you pour it to make Rava Dosa. Ensure the pan is very hot and then pour the batter beginning from the edges across the pan. Next, fill up the gaps in between. Do not let the batter in one place. Once done with pouring the batter, reduce the flame to low. Pour 1 tsp ghee or oil around the edges and on top.
  5. Let the Rava Dosa toast well on low flame until the edges leave the pan. When done, the edges of the Rava Dosa will become crispy and come off the pan easily. This is the time you know it is done.
  6. When you see all the batter is cooked fully, then fold and remove the Rava Dosa to a serving plate. Rava dosa is best served hot with coconut chutney and sambar.

The crispy yet soft Dosa goes just right with the Sambar and Coconut chutney. The ingredients are so healthy and nutritious to have on a regular basis as well. However, you might have a mixed feeling initially depending upon your taste buds.
