Cibo Bistro, an Italian restaurant, celebrates its 17th year in operation. Founded in 2007, “How do you pronounce Cibo?” ‘CHEE-BOW", it means food in Italian! Fresh ingredients and honest food are the soul of our operations. When I walked into Cibo Bistro, I was immediately struck by its cozy, welcoming vibe. The place has a charming mix of antique pieces that give it a unique, vintage feel. It’s the kind of spot where you instantly feel at home. I found myself drawn to the small outdoor space, a perfect little nook to enjoy some fresh air while savoring a meal. Whether you're catching up with friends, sharing a family dinner, or even having a casual meeting, Cibo provides just the right setting. The ambiance is warm and intimate, making it easy to settle in and enjoy good food in good company.

FALAFEL with HUMMUS
The meal began with a delightful Falafel served with Hummus. The deep-fried patties, made from mashed chickpeas, herbs, and spices, were crispy on the outside and tender on the inside. The accompanying Hummus, smooth and creamy, had a perfect balance of tahini, paprika, cumin, and a touch of lemon juice, elevating the falafel's flavor profile.
CHEESE, JALAPENO & POTATO CROQUETTES
Next, I indulged in the Cheese, Jalapeno & Potato Croquettes, one of Cibo’s top orders. These potato mash fritters, stuffed with gooey cheese and spicy jalapeno peppers, were a taste sensation. The coriander and parsley salsa, along with the BBQ sauce, provided a refreshing and tangy contrast, making every bite irresistible.
COUS COUS
The Cous Cous was a standout dish, showcasing the flavors of the Mediterranean. The bulgar grain was steamed to perfection, soft and fluffy, and served with a rich vegetable stew. The combination of green and black olives, preserved lemon, chickpeas, apricots, summer squash, carrots, cinnamon, cumin, and oregano, all dressed in chopped mint and extra virgin olive oil, created a harmonious blend of sweet, savory, and fresh flavors.
MUSHROOM FETTUCCINE W/ GOAT CHEESE AND ARUGULA LEAVES
The Mushroom Fettuccine was a testament to Italian culinary finesse. Fresh egg pasta cooked al dente was enveloped in a creamy garlic mushroom sauce. The addition of Chitlang Goat Cheese, sundried tomatoes, and peppery arugula leaves added layers of complexity and depth, making it a memorable dish.
CHICKEN BBQ BURGER
The Chicken BBQ Burger was an absolute treat. The homemade brioche bun, extra soft and buttery, housed a juicy chicken patty seasoned to perfection. Topped with caramelized onions, crisp lettuce, tomatoes, and cheese, the burger was a harmonious blend of textures and flavors. The crisp fries and homemade chili mayo on the side made it an all-around satisfying experience.
PANEER PITA SANDWICH
Cibo’s signature Paneer Pita Sandwich lived up to its reputation. The homemade pita bread was soft and chewy, providing the perfect vessel for the grilled paneer and vegetables. The combination of garlic mayo, pesto, and tahini dressing added a rich and creamy element, enhancing the overall taste.
CRÈME BRULEE
For dessert, the Crème Brulee was a delightful French tradition done right. The vanilla-cream crème anglaise, with a hint of triple sec, was baked to perfection and topped with a caramelized sugar crust. The contrast between the creamy custard and the crunchy sugar was simply divine.
PISTACHIO ICE CREAM
The meal ended on a high note with the Pistachio Ice Cream. Made with fresh pistachio and almond paste, the gelato was incredibly smooth and creamy, thanks to the crème anglaise base. Served on a sugar cookie nest and topped with caramel sauce, this dessert was a perfect blend of nutty, sweet, and buttery flavors.
