Healthy and balanced food has to be the next and forever trend. With the theme of health and wellness, ‘Nourish’ by Avata has given space to the vegetarian/vegan world. When in there, the vibe, the interiors, people, and just the overall ambience make you feel serene. Located in Baluwatar, Kathmandu, a fresh Vegetarian/vegan restaurant with so many food items gives a new perspective to anyone who thinks eating healthy and vegetarian in restaurants or outside the house is not practicable. We talked with Chef Navin, who walked us through the various dishes we got to taste and cooperated with the program manager, Ms Natasha Kafle. 

 

  1. Teriyaki Glazed Tofu:

If you are not a fan of Tofu, then I tell you, Teriyaki Glazed Tofu will change your perspective. As glazy as it sounds, the texture, and the flavour takes it to a new height of deliciousness. Although Tofu is Vegan and healthy, it tastes kind of bland until the seasoning is top-notch. Well, ‘Nourish’ has done a brilliant job with the choice of seasoning, and also the Tofu is seared in a pan with Teriyaki sauce for which soy sauce is mixed with Balsamic vinegar, honey, and Ginger to keep it nutrient-dense. The plating looked beautiful where bite-size glazed Tofu seems smiling at you topped with sun-dried tomatoes accompanied by a beetroot puree. It was a perfect appetizer!

  1. Nettle Soup:

The second appetizer was nettle soup and nettle goes a long way back to Nepali food culture. Even though I feel like anything green is healthy, the vibrant and luxurious green nettles come with nutrients, vitamins, minerals, and iron making them special. They served the soup with toast on the side which is a great combo, giving off a mild flavour and subtle taste of greens. It is a great option if you want something light and healthy.

  1. Spaghetti Herb Pesto:

Imagine, following a healthy diet and you still get to eat Spaghetti. Yes, Spaghetti Herb Pesto can be a great option for you. They grow the basil in their garden hence the pesto sauce was so much flavorful. They use shitake mushrooms and the chef says that those Mushrooms are naturally high in MSG. No wonder, they taste good. Cherry tomatoes, mushrooms, pesto sauce, and spaghetti came together as a perfectly healthy meal. When you take a bite, a creamy pesto sauce well mixed with the noodle, tasty shitake mushroom, and the tangy punch of tomatoes just make you go back for more. Topped with a little bit of cheese and toast, for one person, it is a good portion to get satiated.  
 

  1. Crema Polenta:

Crema Polenta, an Italian dish was another highlight. The dish is very rich in fibre and high protein. It came in layers of Italic flavours. The base was a creamy mushroom sauce with steamed-baked corn flour and topped with spinach, tomatoes, mushrooms, and pretty flowers for the decoration. The corn flour is steamed, let cool down, and then baked perfectly. You need to take each layer on a spoon and take a big bite to get the blast of flavour at once. Surprisingly, this amazing dish has no use for oil and is full of nutrients. Highly recommended!

  1. Almond Chocolate cake:

Yes, desserts can be healthy too! The Almond Chocolate cake that we were served was just amazing. They use no regular flour, but almond flour to make it gluten-free, and also they use brown sugar instead of refined sugar, you can tell they aim for health. So, anyone who is allergic/sensitive to gluten can thoroughly enjoy the dessert. The cake was topped with chocolate mousse and two little pieces of fresh apple, and plating took the thunder. A few nuts, chocolate cream, and pomegranate seeds around the plate made it look so appetizing and yummy. Of course! You have to take a spoon full of creamy chocolate cake and there is a twist of almonds, pomegranate seeds’ crunch, and crisp apple bits. Chocolate, fruit, and nut concoction can never go wrong. You must have to try this one!
