In conversation with the executive chef of Sesame, Mr. Gopal Sethi, he shared his intriguing journey of 20 years with Hyatt which was reflected in the food served: balanced, properly blended spices, cooked with fresh items as they were authentically flavorful, luscious dishes, that’s thriving with the remarkable initiative to bring the richness of traditional dishes from around countries to the spot. Thai & Chinese:

Dim Sum

1. Chicken Shu Mai 

It’s an open Dim Sum, made with chicken mince, mushroom, green onion, ginger, soy sauce, seasonings, and sesame oil. It is a very simple, elegant, Asian dish. It Originated in Cantonese China and since then, the dish has spread throughout the world. There are numerous regional variations of this flavorful delicacy in China mostly eaten as a snack and usually accompanied by tea. The Shu Mai we tasted were mad plump, juicy and flavorful. Price: Rs. 1650.

2. Prawns and Water Chestnut Har Gao

Juicy filling wrapped by translucent skin, Har Gao is a pleasure both on your palate and to your eyes, made with potato starch filled with prawns and seasoning. It was flavorsome and moist in taste; with every bite, we could taste the burst of fillings perfectly blended with seasoning as they claimed it to be. Price: Rs. 1650.

3. Truffle Mushroom Bao

Truffle Mushroom Bao was soft and fluffy, which tasted absolutely delicious by itself or paired with any dish. It is perfect for vegetarians as well as non-vegetarians, making this item one of the famous dishes in Sesame. Steamed buns sprinkled with cocoa powder on the top filled with different savory mushroom fillings like shiitake mushroom, button mushroom, and Truffula; the fusion of taste, and passion of the chef made it even more special. Making it perfect as an appetizer or on its own, served with a spicy dipping sauce that enhances all the flavors. Price: Rs. 1370.

4. Steamed Carrot, Asparagus, Water Chestnut Chives Crystal

A see-through Dim Sum is made with potato starch dough and is prepared using a chopper making the outer skin very thin. A perfect portion of all the vegetables and the burst of mild spices blended well wrapped in this thin dough looked amazing and tasted delightful. Even the chef suggested it’s a must-try for vegetarians out there. Price: Rs. 1370.

5. Steamed Fish with Fragment Fermented Black Bean

Steamed fish is an incredibly versatile dish, fitting for either a weeknight meal or a festive dinner for the holidays. Its steamed fish with black beans sauce, and pepper and topped with fragment Sichuan oil, an iconic Chinese ingredient with a distinctive aroma and rich umami taste, gave the fish a complex flavor—and an attractive look too. Highly suggest having it with steamed rice and sauce which can be added as per your preference. The fish was delightful and a must-have as they have taken the fish dish to another level. It was fresh, mild, and delicate flavors and aromas; summing it up as “exquisite, Lucious fish made with perfection”. Price: Rs. 2175.

6. Clay Pot Seasonal Vegetables

A very simple dish prepared with seasonal vegetables, oysters, garlic, soy sauce, and Sichuan Chili Sauce. An amazing, aromatic, and delicious option, Vegetables in Clay Pots. These vegetables make great sides for a lovely piece of meat. Or serve them over rice as a full meal too. You’re going to be licking all your fingers after you try this one!". The price is Rs. 1245

 

EUROPEAN

  1. Australian Lamb Chops

Australian lamb Chop is less tender, offering rich flavor with a more intense marbling. The meat is marinated with olive oil, salt, black pepper, garlic, and rosemary then it is pan-fried or grilled however you like it. Then the meat is chopped into pieces and again pan-fried with the butter and served with “Ju Sauce” (red wine and a reduction of lamb stock). It has got a unique sweet-grassy-finished flavor accompanied by grilled potatoes sliced in a mandolin. The potatoes are prepared with salt, pepper, seasoning and grilled in the oven which seemed like lasagna and glazed carrot. You must try it when it’s warm. The lamb was super tender and mouth-watering, and the meat has a gamy flavor that spreads on the tongue with a captivating aroma — totally scrumptious, and pleasant with a hint of smokiness. This unique taste and tenderness of meat with a mild hint of sauce make lamb chops one of the best dishes to try in Sesame. Price: Rs. 4040.

  1. Grilled Salmon

The Grilled Salmon also called Norwegian salmon, is straightly imported from Norway. Grilled Salmon is spicy, mildly sweet, salty, and tangy, slightly pink in color, letting our taste buds party. It has a more densely smoky flavor with an intense aroma. The texture is silky smooth, a little on the oily side, with a flavor that is subtly salty. Also, we can’t ignore the fact Salmon is a high-quality protein that is packed with nutrients -- vitamins and minerals (like vitamins A, B6, B12, C, D, Selenium, and Iodine), as well as omega-3 fatty acids, bet you have yet to taste salmon this flavorful. INDIAN

  1. Paratha / Kulcha / Naan

A Kulcha is made of processed flour, Maida left with yeast, and flattened dough baked in tava. A Naan is also a flatbread made from Maida, almost similar in taste to kulcha. A Roti is a flatbread made with pure wheat flour in classic round shapes. These went very well with all the dishes served as they were soft, and tasty, along with options you can have as per your taste. Price: Rs. 375/ 375/ 375.

  1. Lucknowi Gosht Nihari

The kulcha-Nihari combo is heavenly; Tender Lamb Meat, Whole Aromatic Spices Ginger, and saffron. This Nihari is best to take with kulchas which is also a special type of naan, available at Sesame. Nihari is cooked overnight and then served which amazed me, thinking about all the effort and dedication to serving the best quality food that tastes delicately flavored and tender to melt in my mouth. Price: Rs. 1930.

  1. Old Delhi Style Butter Chicken

Butter Chicken is the ultimate comfort food everyone loved! The best flavor-packed, creamy and delicious Delhi Style Butter Chicken. Since it is loaded with flavor and spice, it is great for cold nights. The spicy creaminess is unforgettable and will make you go back for more! Best with steamed rice, Tandoori Roti, Naan, Kulcha, and Paratha. Everyone seemed obsessed with the different tastes burst with every different dish they serve and I bet you will too. Price: Rs. 1860.
